Lion's Mane Mushroom & Walnut Vegan Tacos

  • 2 cups Lion's Mane mushrooms, torn into pieces
  • 1 cup walnuts, roughly chopped
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Tortillas (corn or flour based on preference)

  1. Mushroom & Walnut Mix: In a food processor, pulse the Lion's Mane mushrooms and walnuts until they achieve a ground meat consistency. Don't over-process.

  2. Sauté: In a pan, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent. Add the mushroom-walnut mix, cumin, smoked paprika, salt, and pepper. Cook for 7-10 minutes, stirring occasionally.
